What recipes can I make using pumpkin?
Pumpkin soup

  • Leftover flesh from one pumpkin
  • 50ml olive oil
  • 1 leek, finely chopped
  • 4 garlic cloves, minced
  • 4 slices of bacon, chopped to 1cm pieces
  • 210g arborio rice
  • 950ml hot chicken broth
  • 235ml white wine
  • Salt and pepper, to season

  • Make the pumpkin puree by slicing the squash into chunks, boiling for 20 minutes and then mashing
  • Fry leeks in pan for five minutes, add the garlic and cook for a further two
  • Add the bacon and leave on the heat until it crisps
  • Mix in the risotto rice on moderate heat, gradually adding the broth and stirring until it is fully cooked
  • Add a glug of white wine and stir in the pumpkin puree before stirring

  • Preheat the oven to 200C
  • Bake pumpkin by adding the veg to a tray and covering with foil
  • As the festive squash softens for 15-20 minutes, roll out the pastry
  • Blind bake for 15 minutes until it cooks
  • Whizz up pumpkin with sugar, cream, eggs, cinnamon and vanilla
  • Add to pre-baked pastry case and cook at 180C for 40 minutes until set

Ingredients for the filling:

  • 1kg of pumpkin chopped into wedges
  • olive oil
  • garlic
  • 100g parmesan
  • 100g fresh ricotta
  • 3 eggs, beaten
  • 175g unsalted butter
  • breadcrumbs

For the pasta dough:

  • 500g of strong plain flour
  • 4 free range eggs
  • 50ml white wine


  • Make the pasta dough by putting the flour, eggs, olive oil, wine and salt into a mixer. Stir together on a slow speed for 10 minutes.
  • After preheating the oven at 200C, roast pumpkin for 30 minutes until it has softened
  • Add seasoning, including nutmeg, breadcrumbs and Parmesan. After combined, stir in a beaten egg.
  • Put the ravioli mixture through a pasta machine and repeat until it is thin enough to see your hand through
  • Add a tablespoon of the pumpkin picture at 6cm intervals along the pasta dough
  • Fold over the sheet of pasta, before brushing around filling with water to seal
  • Cut out your ravioli with a pastry cutter before sealing the edges
  • Cook the pasta in boiling water for around five minutes
  • Garnish as you like
